TASTING NOTE
Complex and subtle, flattering aromas of pear and banana combine with fresh citrus notes and spice. With a powerful attack, the mouth offers structure and weight of extremely concentrated yet fresh fruit. The oak is well intergrated and accompanies a delightful, lingering sensation of freshness.

VINIFICATION
Destemming followed by skin contact for 12 hours. Pneumatic pressing with juice selection. Fermentation in 3 to 4 year old barrels and aging on gross lees for 11 months with stirring.
PAIRING
This wine is suited to a wide range of dishes. It reveals marvellously the character of smoked meats, poached salmon, lightly cooked or grilled fish, whites meats and even sheeps cheese from our region. Here are some of our suggestions : langoustines with thai basil, flamed prawns with anise, old fashioned blanquette de veau, tender wild game like pigeon or guinea-fowl.

3 to 6 years
